BIG news in Haley’s world today. My department had an office Super Bowl party and my dish, yours truly, was crowned MVP. Before you set your expectations too high let me bring them back down. MVP was 2nd place…but I was PUMPED, and I lost to some freakin’ awesome homemade meatballs so I can’t even be mad. Third place was buffalo chicken dip. Seriously stiff competition.
I’m usually the person that runs into the grocery store as they’re closing the night before to grab a box of cookies so I don’t show up empty handed, but for some reason I decided to go the extra mile this time and try a simple Italian slider recipe that seemed perfect for a Super Bowl themed luncheon. Seriously, the time & effort to reward ratio is killer for these small sandwiches. Not only did I bring home an MVP title but I got to do it in my ‘That’s Mahomey’ t-shirt with an image of my favorite MVP, Patrick Mahomes, on the front. For those of you that don’t know – he is currently the starting quarterback for the Kansas City Chiefs (and totally killing it by the way) and formerly the starting quarterback for Texas Tech.
I’m now proudly displaying my plastic silver spray painted trophy in a high visibility spot on my desk. Seriously, I’ve got to really savor this moment.
Italian Slider Recipe:
- 1 package Hawaiian rolls (12 count)
- 1/4 lb ham
- 1/4 lb salami
- 1/4 lb pepperoni
- 1/4 lb provolone
- 1/3 cup melted butter
- pinch of Italian herbs/Italian seasoning
- Optional: roasted red peppers, sliced pepperoncini
- Preheat oven to 350.
- Place rolls on baking sheet and slice in half. Keep intact, just slice the top half off.
- Add meats, cheese, and optional peppers.
- Melt butter and mix herbs/seasoning.
- Brush butter on tops of rolls.
- Bake 15-20 minutes.
