If you know anything about me you know that I would take hot wings or a burger over pretty much anything else. Unfortunately, this could have been what contributed to my nearly 30 pound weight gain in grad school (which has since been lost btw. Whoop whoop!)… so I try to eat healthy most of the time. We all know the 80-20 rule, right? Anyway, here’s a quick and easy salad you can toss together as a lunch or a side.
Disclaimer: I don’t typically enjoy salad but I do enjoy this one! I also have no measurements for anything (because it’s a salad) so throw it together however your heart desires.
- Spring Mix Lettuce
- Arugula
- Sunflower Seeds
- Almonds
- Grapes
- Blueberries
- Strawberries (optional)
- Pear/Apple (optional)
- Dried Cranberries
- Mushroom
- Cucumber
- Shredded Goat Cheese/Mozzarella/Whatever Cheese You Like
- Dressing: I prefer a plain lemon olive oil or balsamic vinegar of some sort. Leave your favorites below!
